Day Eighteen: Three Ingredient Truffles
During the holidays I love to bake and I’ve been making these Oreo Truffles for years now. These things are so easy to make and decadent they are the perfect holiday treat to give to all your friends and family.
All you need is a pack of Oreos, a block of cream cheese and a pack of almond bark for coating.
First you will take the pack of Oreos and place in the food processor. Run until it there are no more lumps and the Oreos are a fine dust.
I think cube my soften cream cheese and place in the food processor too. I run until the dough starts to form a ball and the cream cheese is incorporated into the mixture.
This year I did something a little different than normal. Usually I go ahead and form into balls at this point and then refrigerate for a few hours but I was running short on time. Instead I rolled the Dough into a log, similar to if you are making cookie dough and then let placed in the refrigerator.
This allowed me to form the balls and coat with the almond bark another day. You can do which ever is easiest for you and what time permits.
The next day I took the dough from the fridge and sliced into 1/4” slices. This helped to keep each truffle the same size. I think formed the dough into a ball and added back into the fridge while I melted the chocolate.
You can melt the almond bark in the microwave according The the package of you can do it on the stove top in a double boiler. Whichever you prefer, however I used the microwave since it’s easier.
Once your chocolate is melted you dip the balls into the chocolate. Roll around and then place on the cookie sheet lined with parchment paper. Let the chocolate harden and enjoy! I keep finished truffles in the fridge since they do contain cream cheese.
